Spring means fresh Morels! Morels, or Morchella in your Italian cookbooks, is an above ground funghi cousin of the truffle and one of the first spring mushrooms to appear. Because of the unusually dry weather this season Ontario, Michigan and Minnesota morels are late, but the Cheese Boutique has sourced theirs from BC foragers. Like the two other mushrooms that make the gourmet triumvirate, ceps (or porcinis) and chanterelles, the morel cannot be domesticated. Morels make a wonderful sauce for pasta (especially gnocchi) or meats like veal, often with cream: see http://www.fresh-morel.com/recipe.htm for fresh morel ideas. OK, we goofed! Last week's teaser for our look at the Dufferin Grove Park Farmers Market implied that you could find granola there. After two trips, we admit there's no granola. What there is is enough organic greens, exotic ingredients, small production meats and even hand pressed extra virgin olive oil to satisfy any Toronto Armani-clad foodie devotee.
