Overview
Parsnip is a type of root and tuberous vegetable. It resembles a baby white carrot but has a very different taste. It is more bitter and starchy providing a unique flavor to many dishes. For many years, Parsnips and Potatoes were used in many dishes depending on availability. Today, it can be boiled, roasted or used in stews, soups and casseroles.
The parsnip is rich in vitamins, particularly potassium with 600 mg per 100 grams. It's origins are from the Mediterranean region and when the Roman Empire expanded north, they brought this root vegetable with them. Today, they are grown and widely available throughout the world and are a classic side vegetable for roast beef dinners.
