Overview
Rhubarb is a type of bulb and stem vegetable. They are easily identified by their long red stalk and large bright green leaves. The leaves are considered unfit for human consumption however the stalk is used in a variety of dishes including pies, breads, and sauces. Rhubarb stalk has a tart flavor and a texture similar to celery. The tartness of this vegetable make it an excellent compliment for sweeter ingredients like sugar and strawberries.
