Overview

Bacon is a type of meat derived from pigs. It is traditionally a cut of pork taken from the sides, belly, or back of a pig. It is then cured, smoked, or a combination of both. Bacon may also be produced from other meats and poultry however Pork Bacon is the most popular. In Italy, it is called Pancetta. Bacon varies from different regions and the terms used to describe it can be confusing for the global culinary traveler. In the United States, ordinary bacon is produced exclusively from the belly of a pig. In the UK, this is referred to as streaky bacon whereas the meat on the back of the pig is called back bacon. The Americans refer to back bacon as Canadian-style or Canadian bacon and the term is used to describe the leaner cuts known in Canada as Peameal Bacon. Canadians use the term bacon to describe the traditional strip bacon or as the English refer to as Streaky Bacon.
